Greens Sauteed with Garlic and Tomato Juice

Overview :

Leafy green vegetables are delicious cooked in broth and tomato juice. Prep Time: Approximately 35 minutes

Ingredients to be used :

1 tsp butter
2 cloves garlic (minced)
1 large bunch leafy greens (collard greens; kale; or mustard greens)
1 cup tomato juice
1 cup broth (chicken or vegetable)
Salt and pepper to taste

Steps to cook this Recipe :

Add butter to large pan and heat until melted

Add minced garlic and cook for about 1 minute

Remove stems from greens and add to pan.  Stir and cook for 1 minute

Add broth and tomato juice and sprinkle with salt and pepper to taste

Let simmer for 25-30 minutes until most of the liquid has evaporated

And your dish is ready to eat!
